My problem is I can't get the rear rotor to slide off after I have removed the disk brake assembly...? Is it just stuck (rusted) around the wheel bolts and just needs a good whack, or have it missed something? I want to check the condition of the park brake shoe/pad and the mechanism because it has so little travel and seems to drag a little. Any info will be greatly appreciated.

A soft tap with a dead blow hammer will free it. It's just seized on there a bit.
